Title: Green Pepper Relish (Karya)

1lgBell peppers; very fresh, flawless
1mdGarlic cloves, crushed
1/8tsSalt

Wash green pepper and chop coarsely, discarding seeds, membranes, and core. Pound garlic and salt in mortar with pestle. Add pepper and pound to a pulp. Alternative, process all ingredients to paste in food processor. Serve at room temperature in small bowl, with injera for dipping and Ethiopian Beef Tartare, Spicy Chicken Stew, or grilled meats.
